Vermicelli Kheer / Semiya Payasam is among the simplest and tasty kheer that anybody can make quickly. We normally prepare this dessert during some occasions or festival or when an unexpected guest visit.
It's a type of pudding prepared from milk, vermicelli and dry fruits. I have prepared it from wheat semolina vermicelli but you can make with whole wheat, all purpose or rice vermicelli as well.
Milk - 500 ml
Vermicelli - 1 Cup
Cashew Nuts - 5 to 6
Raisin - 5 to 6
Ghee - 2 Tsp
In a pan boil milk. Heat another pan, add 1 tsp of ghee and add cashew nuts and raisin. Fry it for till cashew nut turns slightly brown and raisin swells. Transfer it in a small bowl.
In the same pan add rest of the ghee and fry vermicelli till slightly brown.
Now add vermicelli to the milk and cook on low heat till it boils. Now add sugar to the milk and cook till vermicelli is soft and milk thickens a bit.
Add dry fruits and cardamom powder and stir it. Cook for 1 more min and switch off the stove.
Garnish it with some nuts.
Your Vermicelli Kheer / Semiya Payasam is ready to serve
Serve it hot or chilled.
