Stuffed Brinjal or Bharwa Baingan is
actually a special incredible
dish. In this baby eggplants are cut and stuffed with onion, garlic, coconut and spice. When
cooked it makes a delicious
dish and the overall look of
the dish is also appealing which
is even more certain
to earn
you some kind comments. The entire procedure of preparing the filling, to the cutting of the veggie,
to stuffing and
lastly cooking is time consuming and
yet enjoyable. In
India most of the regions/states make their own small changes to this recipe. Today I am posting here Maharastrian style stuffed brinjal recipe.
For Filling:
Onion
- 1
Garlic
- 7 to 8 Cloves
Groundnuts - 1/2 cup
Red
Chilli Powder - 1/2 Tsp
Coriander
Seeds - 1/2 Tsp
Cumin
Seeds - 1/2 Tsp
Dry
Coconut - 1 Cup
A
Pinch of Turmeric Powder
Water
- As needed
Salt
- As Per Taste
Other Ingredient
Eggplant
- 8 Pcs
Onion
- 1 Chopped
Cumin
Seeds - 1/2 Tsp
Mustard
Seeds - 1/2 Tsp
Garlic
- 4 to 5 Cloves
Curry
Leaves - 5 to 6 Leafs
Oil
- 1 Tbsp
Coriander Leaves - 1/2 Cup
Coriander Leaves - 1/2 Cup
Instruction
Wash baby eggplants or brinjals and
partially slit into four part keeping the stem intact and keep aside.
In a pan roast groundnuts, cumin
seeds, coriander seeds and dry coconut one by one and keep aside.
Now mix the
roasted groundnut, cumin seeds, coriander seeds, dry coconut and rest of the
filling ingredients in the mixer and grind to make a thick paste of it.
Stuff the slitted brinjal with the
grinded paste using your fingers or spoon and keep it aside.
Heat a pan in a low flame and add
oil in it. Add mustard seeds and cumin seeds to the oil and let it splutter.
Then add chopped onion, garlic and curry leaves to it.
When the onion is soft or transparent add stuffed brinjal to it and let it fry. Stir it occasionally so the brinjal get fried on all the sides.

Now add the remaining paste to the
pan and add water according to the consistency you want. Add salt as per your
taste. Don't forget that we have already added salt to the paste while grinding.
So add salt only if required. Cover the pan and cook it for 6-7 mins.
Your stuffed brinjal is ready to
serve. Garnish it with coriander leaves. You can serve it with chapatti or rice.
