Carrot and Orange Soup

Natural flavor of carrots and orange cooked with ginger and nutmeg helps make this soup superbly tasty. Carrots and orange provide the soup a refreshing, full-bodied consistency, and also a huge portion of health improving anti-oxidants. Regardless of whether you have this soup cold or hot, the extreme carrot and orange flavor and amazing color will always make it unforgettable.
We all know that Carrot is one of the  power-food, that contain  vitamin A, vitamins C, D, E, K, B1 and B6 and a number of other effective health benefits such as gorgeous skin, improved vision, anti-aging, etc. Same way Orange is sweet and juicy that contain vitamins A, B6, C, E and number of other benefits. 

Ingredients


Carrots - 1 kg
Orange - 1
Onion -1
Vegetable Stock - 4 Cups
Coriander Leaf - 1 Cup
Olive oil - 1 Tbsp
Ginger - 1 Piece (3" Long)
A Pinch of Ground Nutmeg 
A Pinch of Black Pepper Powder
Salt to Taste

Instruction

Cut the carrot into small pieces and keep aside. Now heat a pan and add oilve oil to it. Keep the heat on low flame. Add onion and ginger to the pan and keep stirring till it is soft and transparent. Now add carrot and stirring continously till it is soft or for 5min. 

Once the carrot is soft its time to add vegetable stock and bring it to boil. Add 2 strips of orange rind to the pan and let it boil. It will take around 30 min to boil and the carrot will become very soft. Don't forget to cover the pan.

Now take off the pan from heat and let it cool for some time. Remove the orange rind from the pan. Put all the ingredients of the pan in a blender or food processor to make a puree of it.  

Peel the orange and remove the seeds from it. Put it in the juicer and extract juice from it and keep aside. Heat the pan again and put the puree back to the pan. Add orange juice to pan and bring it to boil. Keep the heat on medium flame. Once it is boiled add grounded salt, nutmeg and black pepper powder and stir for minute.

Your Carrot and Orange Soup is ready to serve. While serving top it with coriander leaf.
