Aloo Paratha

Aloo Paratha is a well-known North Indian dish. It is usually a spiced potato mixture stuffed in flat bread. It can be served as breakfast or as a complete meal. It is made with wheat flour and a stuffing of mashed potatoes and some spices. Even kids love this dish.

Again the credit for this recipe goes to my paratha friend Rajeev, I have mention about him in my previous post Onion Paratha Recipe.

How To Make Aloo Paratha?

Carom Seeds - 1/4 Tsp
Green Chili - 1
Red Chili Powder - 1 Tsp
Garam Masala - 1 Tsp
Aamchur Powder / Dry Mango Powder - 1 Tsp
Turmeric Powder - 1/4 Tsp
Coriander Leaves - 1/4 Cup
Salt - As Per Taste
Oil - 1 Tbsp

Instruction

Serve Aloo Paratha

Pressure cook potatoes till 3 whistle. Let it cool down completely. In bowl mix wheat flour, salt, oil and water as required and knead it to soft dough. Pour 2 -3 drop of oil on the dough and spread it all over.
Cover it and keep it aside for 15 mins.

Meantime prepare the stuffing. Peel and mash boiled potatoes and keep aside. Heat a pan add oil in it. Once the oil is hot enough add carom seeds. Now add mashed boiled potatoes and mix will. Add chopped green chili, turmeric powder, red chili powder, garam masala, aamchur powder and salt.. Mix well and cook for 1 min. Switch off the stove and let it cool down.

Now divide dough into 4 equal part and make a ball of it.

Dust the board with little wheat flour and start rolling 1 ball into 4 inch round shape.

Add the potato stuffing in the center and join the edges of the rolled ball together and then press it down.

Again dust the ball and roll it.

Now heat a tawa or non stick pan and put the paratha on it. Once the bubble starts appearing flip it to other side. Apply ghee on paratha and let it cook on other side till you get brown spots. Now again flip it and apply ghee on this side as well. Cook till you see brown spots on both the sides.

Transfer it to the plate. Continue the same procedure with rest of the dough balls.

Your Aloo Paratha is ready to serve.
