Kothimbir Vadi

Kothimbir Vadi is a Maharashtrian snacks. Kothimbir is a Marathi word and it means coriander leaves. It is mainly coriander fritters. It is made from coriander leaves, gram flour and spices. It is initially steamed and chopped into slices and then fried.

It is crispy as well as a tasty dish. It can be served as tea time snacks or side dish for meals.

Ingredients


Coriander Leaves - 1 Large Bunch
Besan - 250gms
Red Chili Powder - 1Tsp
Carom Seeds - 1/2 Tsp
Cumin Seeds - 1/2 Tsp
Turmeric Powder - 1/4 Tsp
Salt As Per Taste
Oil For Deep Frying

Instructions

Coriander Leaves


Chop coriander leaves and keep aside.
Gram Flour Batter

In another bowl mix gram flour (besan), red chili powder, carom seeds, turmeric powder and salt. Now add little water and mix it to make a batter. The consistency of batter should be thicker than dosa batter.
Add Coriander Leaves To Gram Flour Batter

Now add chopped coriander leaves to the batter and mix well.
Pour The Batter In Baking Pan
Steam It In Idli Cooker

Add water in idli cooker and pre-heat the water. Pour the batter in a baking pan and transfer it to idli cooker. Steam for 25 min on high heat.
Steamed Kothimbir Vadi
Cut Steamed Kothimbir Vadi In A Square Shape

Once the batter is steamed remove it from idli cooker and let it cool down. Now cut it in a square or diamond shape.
Heat Oil
Fry Steamed Kothimbir Vadi In Oil

Now heat a deep pan and add oil for deep fry. Once the oil is hot, add steamed kothimbir vadi and fry till it is slightly crispy.

Your Kothimbir Vadi is ready to serve.
Serve Kothimbir Vadi

Serve it hot with green chutney or ketchup.
